BLT Pasta Salad
I- Ingredients for 4 servings:
- 4 cups small macaroni shells, cooked;
- 2 tomatoes, chopped;
- Bacon Bits;
- 1 cup lettuce, finely chopped;
- 1/2 cup Fat Free mayo;
- 1/2 cup Fat Free sour cream;
- Juice from 1 lemon;
- Salt and Pepper to taste;
- Cooked peas and carrots (Optional).
II- Directions:
- Cook your pasta according to package directions.
- Drain, rinse with cold water, and drain again.
- Place your pasta in a large bowl and add in your mayo, sour cream, and lemon juice.
- Mix them together.
- Add in your lettuce, tomatoes, bacon bits, salt and pepper and mix well.
- Give it a little taste test and make sure the seasoning is at your liking.
- Add a little pinch of garlic too.
- Cover and refrigerator about an hour before serving. Serve cold and enjoy!
