Sriracha Eggs

I- Ingredients for 1 Serving:

  • 3 egg whites;
  • 1/2 tbsp coconut oil;
  • 1/2 tbsp peanut butter;
  • 1/2 tsp sriracha;
  • 2 sprigs chopped parsley (about a tbsp chopped);
  • Chopped unsalted peanuts;
  • 1 diced tomato.

II- Directions:

  1. Whisk egg whites with chopped parsley, then pour into skillet on medium.
  2. When eggs are about halfway done, throw in coconut oil, peanut butter, and sriracha, mix together until eggs are scrambled.
  3. Plate and top with tomato and peanuts.
