Apple Carrot Salad with Pistachios

I- Ingredients for 4 servings:

  • 3 cups carrots, julienned;
  • 2 medium Macintosh apples (or other sweet apples), julienned;
  • ⅛ cup lemon juice;
  • 2 tbsp sugar;
  • ½ tsp ground cinnamon;
  • ½ cup chopped pistachios, divided;
  • Salt (optional).

II- Directions:

  1. In a large bowl, combine the carrots, apples, lemon juice, sugar, and cinnamon;
  2. Add ¼ cup pistachios; toss to combine;
  3. Season with salt, (optional);
  4. Refrigerate, covered, until serving;
  5. Sprinkle with remaining ¼ cup pistachios before serving.
