Roasted Garlic Parmesan Zoodles

I- Ingredients for 2 Servings:

  • 1 large zucchini;
  • 3/4 Tbsp olive oil;
  • 2 garlic cloves Minced or 1 teaspoon garlic powder;
  • 1/2 tsp paprika;
  • 1/2 tsp dried parsley;
  • Salt and pepper;
  • 2 Tbsp grated Parmesan or Parmesan-Romano blend;
  • Fresh chopped parsley (Optional).

II- Directions:

  1. Preheat oven to 400F degrees;
  2. Line a baking sheet with foil;
  3. Spiralize your zucchini;
  4. In medium bowl add zucchini, garlic, paprika, dried parsley, salt pepper, olive oil and mix;
  5. Spread evenly on baking sheet;
  6. Bake at 400F for 10 minutes;
  7. Immediately after removing from over toss with Parmesan cheese;
  8. Garnish with fresh chopped parsley (Optional).
