/ BROCCOLI - SNACK - CHICKEN SAUSAGE - GARLIC - CHICKEN - ITALIAN - STIR FRY

Italian Style Chicken Sausage Stir Fry

I- Ingredients for 4 servings :

  • 1 package italian chicken sausage (pre-cooked, 4-5 links, cut in 1” pieces);
  • 2 Tbsp olive oil (divided);
  • 2 garlic cloves (minced);
  • 2 cups broccoli florets (fresh);
  • 1 bell pepper (large, or 6 mini sweet peppers, sliced thin);
  • 1/2 tsp oregano;
  • salt;
  • pepper.

II- Directions:

  1. Heat 1 tablespoon olive oil in a large non stick skillet over medium heat.
  2. Add chicken sausage pieces and brown on both sides for about 5-6 minutes.
  3. Take chicken sausage out of pan and set aside on a plate.
  4. Heat 1 tablespoon olive oil in same skillet. Raise heat to medium high.
  5. Add minced garlic, broccoli and peppers to pan and saute for 3-4 minutes.
  6. Season with oregano, salt and pepper.
  7. Add chicken sausage back in pan and gently toss, cooking together for another few minutes until vegetables are bright and slightly crisp.
  8. Serve over brown rice or whole wheat orzo drizzled in olive oil, salt, pepper and parmesan cheese.
