Creamy Chipotle Pasta Salad

I- Ingredients for 12 Servings:

  • 1 (12 oz) box of rotini;
  • 2 cups salsa;
  • 1 cup plain yogurt;
  • 1 cup finely shredded cheddar cheese;
  • 1 chipotle (aka adobe) pepper, in sauce, finely diced;
  • 1 can (1.5 cups) black beans (if using canned, drain and rinse);
  • 2 cups frozen corn.

II- Directions:

  1. Put a large pot of water on the stove to boil. Once it comes to a rapid boil, slide in the rotini. Cook until al dente.
  2. Meanwhile, stir together the salsa, yogurt, cheese, and chopped chipotle.
  3. Once the pasta is cooked, combine in a large bowl with the black beans and frozen corn.
  4. Pour the sauce over to cook. Stir to evenly distribute the ingredients.
  5. Only dress the salad shortly before serving.
