Chicken Apple Salad
I- Ingredients for 4 servings:
- 2 cups cubed cooked chicken breast;
- 1 cup diced Granny Smith apple;
- 1/2 cup diced celery;
- 1/4 cup dried cranberries;
- 2 Tbsp chopped green onions;
- 1/3 cup light mayonnaise;
- 1 Tbsp light sour cream;
- 1 tsp fresh lemon juice;
- 1/4 tsp salt;
- 1/4 tsp freshly ground black pepper;
- 1/8 tsp ground cinnamon.
II- Directions:
- Combine first 5 ingredients in a large bowl.
- In a separate bowl, combine mayonnaise and remaining ingredients, stirring well with a whisk.
- Add mayonnaise mixture to chicken mixture, tossing well to coat.
- Serve and Enjoy !!
