Turkey Panini with Apple Cheddar and Arugula

I- Ingredients for 2 Servings:

  • 3 tsp plain, non fat Greek yogurt;
  • 3 tsp stone ground mustard;
  • 2 whole wheat sandwich thins;
  • 3 oz. turkey breast;
  • 1 oz. Cheddar cheese, thinly sliced;
  • ½ Gala apple, sliced;
  • ½ cup arugula.

II- Directions

  1. Heat a Panini maker.
  2. In a small bowl, stir together the yogurt and mustard.
  3. Spread the yogurt sauce on both halves of each sandwich thin.
  4. Divide the turkey breast, cheese, apple and arugula evenly between the two sandwiches.
  5. Grill the sandwiches on the Panini maker until the cheese is melted and the bread is toasted.
  6. Serve and enjoy.
