Low Carb Baked Ricotta Cheesecake

I- Ingredients for 4 servings:

  • 2 cups low-fat ricotta cheese;
  • Sweetener of your choice (Splenda is a good one);
  • 1 tsp vanilla extract;
  • 2 eggs.

II- Directions:

  1. Preheat oven to 355°F/180°C.
  2. Mix ricotta cheese, sweetener and vanilla extract.
  3. Add in eggs gradually and continue to beat until smooth.
  4. Spoon the batter into 4 ramekins and bake in the preheated oven for 20-25 minutes.
  5. Enjoy it warm.
