Apple Carrot Salad with Pistachios
I- Ingredients for 4 servings:
- 3 cups carrots, julienned;
- 2 medium Macintosh apples (or other sweet apples), julienned;
- ⅛ cup lemon juice;
- 2 tbsp sugar;
- ½ tsp ground cinnamon;
- ½ cup chopped pistachios, divided;
- Salt (optional).
II- Directions:
- In a large bowl, combine the carrots, apples, lemon juice, sugar, and cinnamon;
- Add ¼ cup pistachios; toss to combine;
- Season with salt, (optional);
- Refrigerate, covered, until serving;
- Sprinkle with remaining ¼ cup pistachios before serving.
