Stuffed Cabbage Soup

I- Ingredients For 8 Servings:

  • 1 lb ground chicken breast;
  • 1 small head of green cabbage;
  • 2 large carrots sliced;
  • 1 large onion finely chopped;
  • 4 cloves of garlic minced;
  • 1 tbsp olive oil;
  • 1 1/2 tbsp Worcestershire sauce;
  • 1 28oz Canned Diced Tomatoes;
  • 2 tbsp tomato paste;
  • 1 tsp paprika;
  • 1 tsp dried thyme;
  • 2 cups fat-free chicken broth;
  • Juice from 1/2 a lemon;
  • Salt & Pepper to taste.

II- Directions:

  1. Heat oil in a large pot over medium-high heat.
  2. Add in onions, carrots, and garlic, and sauté for 2 minutes.
  3. Add in ground chicken meat, and cook, while using a spoon to break up the meat, until the meat is browned and cooked through.
  4. Stir in diced tomatoes, tomato paste, chicken broth, paprika, thyme, and salt and pepper.
  5. Bring to a simmer, then add the cabbage and lemon juice.
  6. Allow soup to return to a simmer, then turn heat to low.
  7. Cover and cook for about 30 minutes.
