Potato Cakes

I- Ingredients for 8 servings :

  • 3/4 cup all-purpose flour;
  • 1 tsp baking powder;
  • 14 oz mashed potatoes (cold);
  • 3 1/2 Tbsp butter (melted, plus extra for greasing);
  • 3 Tbsp chives (chopped);
  • Mushrooms;
  • Tomatoes.

II- Directions:

  1. Sift the flour and baking powder together.
  2. Stir in the mashed potato, butter and chives.
  3. Season to taste.
  4. Using wet hands, shape dough into a ball and then flatten the ball into a disc about 7 inches across.
  5. Cut into 8 wedges.
  6. Melt a little butter in a frying pan or griddle pan.
  7. Cook the potato cakes for about 4 mins on each side.
  8. Serve with grilled tomatoes and fried mushrooms.
