Instant Pot Lemon Poached Chicken Breasts

I- Ingredients for 4 Servings:

  • 4 boneless, skinless chicken breasts;
  • 4 cups chicken stock;
  • 1 lemon, thinly sliced;
  • 4 sprigs fresh thyme;
  • 1 tsp peppercorns.

II- Directions:

  1. Place all ingredients in the Instant Pot.
  2. Lock on the lid and make sure vent is set on sealing.
  3. Using manual mode at high pressure, set time for 5 minutes.
  4. When the timer goes off, use NPR (Natural Pressure Release) for 2 minutes, then do a quick release.
  5. Enjoy!!
