/ BUFFALO CHICKEN - CHICKEN - DIP

Buffalo Chicken and Blue Cheese Dip

I- Ingredients for 4 servings:

  • 4 ounces Neufchâtel (softened, often sold as 1/3 Less Fat Cream Cheese);
  • 1/2 cup crumbled blue cheese;
  • 1 cup plain low fat greek yogurt;
  • 2 cups chicken breasts (cooked, shredded);
  • 1/2 cup buffalo sauce (use more if you like it spicy, this amount is for a mild dip);
  • 2 tablespoons chopped parsley (fresh);
  • 1/2 cup shredded sharp cheddar cheese;
  • 1/2 teaspoon dried dill;
  • 1/2 teaspoon garlic powder;
  • 1/2 teaspoon onion powder;
  • Salt & pepper;
  • 2 green onions (sliced thin).

II- Directions:

  1. Preheat oven to 350°.
  2. In a large bowl, mix together the softened Neufchâtel cheese, blue cheese, Greek yogurt, shredded chicken, buffalo sauce, parsley, cheddar, dill, garlic powder, onion powder, salt and pepper until well combined.
  3. Pour mixture into an ungreased one quart casserole dish.
  4. Bake in preheated oven for 15-20 minutes or until the dip is bubbly and the top is beginning to brown.
  5. Sprinkle green onions on top and serve immediately with dippers.
