Buffalo Chicken and Blue Cheese Dip
I- Ingredients for 4 servings:
- 4 ounces Neufchâtel (softened, often sold as 1/3 Less Fat Cream Cheese);
- 1/2 cup crumbled blue cheese;
- 1 cup plain low fat greek yogurt;
- 2 cups chicken breasts (cooked, shredded);
- 1/2 cup buffalo sauce (use more if you like it spicy, this amount is for a mild dip);
- 2 tablespoons chopped parsley (fresh);
- 1/2 cup shredded sharp cheddar cheese;
- 1/2 teaspoon dried dill;
- 1/2 teaspoon garlic powder;
- 1/2 teaspoon onion powder;
- Salt & pepper;
- 2 green onions (sliced thin).
II- Directions:
- Preheat oven to 350°.
- In a large bowl, mix together the softened Neufchâtel cheese, blue cheese, Greek yogurt, shredded chicken, buffalo sauce, parsley, cheddar, dill, garlic powder, onion powder, salt and pepper until well combined.
- Pour mixture into an ungreased one quart casserole dish.
- Bake in preheated oven for 15-20 minutes or until the dip is bubbly and the top is beginning to brown.
- Sprinkle green onions on top and serve immediately with dippers.
