Sriracha Eggs
I- Ingredients for 1 Serving:
- 3 egg whites;
- 1/2 tbsp coconut oil;
- 1/2 tbsp peanut butter;
- 1/2 tsp sriracha;
- 2 sprigs chopped parsley (about a tbsp chopped);
- Chopped unsalted peanuts;
- 1 diced tomato.
II- Directions:
- Whisk egg whites with chopped parsley, then pour into skillet on medium.
- When eggs are about halfway done, throw in coconut oil, peanut butter, and sriracha, mix together until eggs are scrambled.
- Plate and top with tomato and peanuts.
