Smoked Salmon Pasta

I- Ingredients for 2 servings:

  • 7 oz spaghetti;
  • 3 1/2 oz smoked salmon;
  • 1 tsp olive oil;
  • 1/2 lemon (juiced);
  • 1 tsp lemon zest;
  • 2 Tbsp flat leaf parsley (chopped);
  • Grated parmesan cheese (to serve);
  • Ground black pepper (to taste);
  • Salad (large green, to serve).

II- Directions:

  1. Cook pasta in a large saucepan according to packet instructions.
  2. Drain. Return to pan.
  3. Slice smoked salmon into thin strips.
  4. Stir olive oil and lemon juice through the pasta.
  5. Combine with lemon zest, parsley and smoked salmon, stirring over low heat until warmed.
  6. Sprinkle with parmesan and pepper and serve with a large green salad.
