Smoked Salmon Pasta
I- Ingredients for 2 servings:
- 7 oz spaghetti;
- 3 1/2 oz smoked salmon;
- 1 tsp olive oil;
- 1/2 lemon (juiced);
- 1 tsp lemon zest;
- 2 Tbsp flat leaf parsley (chopped);
- Grated parmesan cheese (to serve);
- Ground black pepper (to taste);
- Salad (large green, to serve).
II- Directions:
- Cook pasta in a large saucepan according to packet instructions.
- Drain. Return to pan.
- Slice smoked salmon into thin strips.
- Stir olive oil and lemon juice through the pasta.
- Combine with lemon zest, parsley and smoked salmon, stirring over low heat until warmed.
- Sprinkle with parmesan and pepper and serve with a large green salad.
