Healthy Fruit Salsa with Cinnamon Crisps

I- Ingredients

  • Fruit Salsa:
    • 1 (6 oz) Carton of raspberries
    • 1 lb Strawberries
    • 2 Medium golden delicious apples, peeled and diced
    • 1 Tbsp Baking stevia
  • Cinnamon & Sugar Chips:
    • 2 Whole grain/high fiber tortillas
    • 2-3 pkts Stevia
    • 1 tsp Cinnamon

II- Directions

  1. Cinnamon & Sugar Chips:
    1. Preheat the oven to 375F (190.5C) degrees;
    2. Line a baking pan with foil and spray with cooking spray;
    3. In small bowl mix together sweetener and cinnamon;
    4. Spray the tortillas lightly with cooking spray, and sprinkle with cinnamon mixture;
    5. Use a pizza cutter to cut tortillas into wedges;
    6. Bake in hot oven for 10-12 minutes, or until the tortillas are lightly brown, and/or starting to get crispy;
    7. Remove from oven and let cool completely;
  2. Fruit Salsa:
    1. Mix everything for the fruit salsa together in a medium bowl;
    2. Mash the raspberries slightly to bring juices out;
    3. Cover and chill for at least one over in the refrigerator;
    4. Serve with cinnamon and sugar chips (if desired).
