Healthy Fruit Salsa with Cinnamon Crisps
I- Ingredients
- Fruit Salsa:
- 1 (6 oz) Carton of raspberries
- 1 lb Strawberries
- 2 Medium golden delicious apples, peeled and diced
- 1 Tbsp Baking stevia
- Cinnamon & Sugar Chips:
- 2 Whole grain/high fiber tortillas
- 2-3 pkts Stevia
- 1 tsp Cinnamon
II- Directions
- Cinnamon & Sugar Chips:
- Preheat the oven to 375F (190.5C) degrees;
- Line a baking pan with foil and spray with cooking spray;
- In small bowl mix together sweetener and cinnamon;
- Spray the tortillas lightly with cooking spray, and sprinkle with cinnamon mixture;
- Use a pizza cutter to cut tortillas into wedges;
- Bake in hot oven for 10-12 minutes, or until the tortillas are lightly brown, and/or starting to get crispy;
- Remove from oven and let cool completely;
- Fruit Salsa:
- Mix everything for the fruit salsa together in a medium bowl;
- Mash the raspberries slightly to bring juices out;
- Cover and chill for at least one over in the refrigerator;
- Serve with cinnamon and sugar chips (if desired).
