Weight Loss Low Fat Blueberries Muffins

I- Ingredients

  • 1 cup rolled oats, soaked in 1 cup skim milk for 1-2 hours
  • 1/2 cup unsweetened applesauce
  • 2 egg whites
  • 1 cup skim milk
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup blueberries

II- Directions

  1. Preheat oven to 400F degrees.
  2. Beat together egg whites, oat-milk mixture, and applesauce.
  3. Combine dry ingredients in a separate bowl.
  4. Add liquid ingredients to dry ingredients and mix until just combined (do not over-mix).
  5. Fold in blueberries.
  6. Fill 12 paper muffin cups with batter (about two thirds full).
  7. Bake for 20 minutes.
