Weight Loss Low Fat Blueberries Muffins
I- Ingredients
- 1 cup rolled oats, soaked in 1 cup skim milk for 1-2 hours
- 1/2 cup unsweetened applesauce
- 2 egg whites
- 1 cup skim milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup blueberries
II- Directions
- Preheat oven to 400F degrees.
- Beat together egg whites, oat-milk mixture, and applesauce.
- Combine dry ingredients in a separate bowl.
- Add liquid ingredients to dry ingredients and mix until just combined (do not over-mix).
- Fold in blueberries.
- Fill 12 paper muffin cups with batter (about two thirds full).
- Bake for 20 minutes.
