Chocolate Banana Nut Mug Cake

I- Ingredients for 4 servings:

  • 2 Tbsp oat flour;
  • 1/2 Tbsp cocoa powder;
  • 1/4 tsp baking powder;
  • 1/2 ripe banana mashed;
  • 1 tsp neutral oil;
  • 1 tsp agave;
  • 1 egg;
  • 2 Tbsp soy milk (or milk of choice);
  • 1 Tbsp mini semi-sweet or dark chocolate chips;
  • 1 Tbsp chopped walnuts.

II- Directions:

  1. In a small bowl mix dry ingredients- oat flour, cocoa powder and baking powder.
  2. In another small bowl mash half a banana, whisk in one egg, 1 teaspoon of oil, 1 teaspoon agave and 2 tablespoons milk of choice.
  3. Add the dry into the wet ingredients and whisk until combined.
  4. Stir in 1 tablespoon chopped walnuts and 2 teaspoons mini chocolate chips.
  5. Microwave for 1 minute 10 seconds, give or take 10 seconds depending on the strength of your microwave.
  6. Top with 1 more teaspoon of chocolate chips and additional chopped walnuts if desired, let cool for a minute, Enjoy!
