Healthy Pear Walnut Bread

I- Ingredients

  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp ginger
  • 3/4 cups vegetable oil
  • 2 cups granulated sugar
  • 3 eggs
  • 2 pears peeled and diced
  • 2 tsp vanilla
  • 1/2 cups chopped walnuts

II- Directions

  1. Preheat oven to 350º F.
  2. Spray one large tube or bundt pan or two loaf pans with non-stick baking spray. Set aside.
  3. Whisk together flour, baking powder, baking soda, salt, cinnamon and ginger together in a medium bowl. Set aside.
  4. Cream together vegetable oil, sugar and eggs.
  5. Spoon in flour mixture and mix until just combined.
  6. Stir in pears, vanilla and walnuts.
  7. Pour into prepared baking pan(s) and bake for 60 minutes, or until skewer or toothpick come out clean when inserted in the center of the bread.
