Healthy Korean Ground Beef Bowl

I- Ingredients

  • The Sauce:
    • 1/4 cup low sodium soy sauce
    • 4 cloves garlic finely minced or grated
    • 1 tbsp sesame oil
    • 2 TBS Brown Sugar
    • 1 TBSP rice vinegar
    • 1 TBSP ginger root grated
    • 1 tsp Chili garlic sauce
  • The Korean Beef Bowls:
    • 1 and 1/2 lbs Ground beef
    • 3 green onions sliced, green and white parts separated
    • 4 eggs
    • 4 tsp butter
    • 1 and ½ cups cooked rice
    • Sesame seeds optional, for garnish

II- Directions

  1. Whisk together the sauce ingredients, set aside
  2. Place a large pan over medium high heat on the stove.
  3. Add the ground beef and brown, breaking the meat up as it cooks until done, approximately 4-6 minutes.
  4. Pour the sauce over the meat and bring to a simmer.
  5. Stir in the white parts of the green onions, cook for 3-4 minutes.
  6. Meanwhile fry the eggs.
  7. Heat a frying pan over medium heat.
  8. When the pan is hot add the butter.
  9. Once butter is melted, crack the eggs into the pan, being careful not to break the yolk.
  10. Reduce heat to low.
  11. Fry until whites are set and yolks are cooked to desired doneness, 4-5 minutes.
  12. To make the korean beef bowl, Add rice to a bowl, top with korean ground beef, then a fried egg.
  13. Garnish with green onions and sesame seeds.
