Quinoa Vegetable Scramble

I- Ingredients for 3 servings :

  • 1/2 cup water;
  • 1/4 cup quinoa;
  • 1 tsp olive oil;
  • 1 cup mushrooms (chopped);
  • 1/2 cup asparagus (chopped);
  • 1/2 cup bell pepper (chopped);
  • 2/3 cup spinach (chopped);
  • 1/2 cup tomatoes (sweet, cut in half);
  • 10 egg whites;
  • Salt;
  • Pepper.

II- Directions:

  1. Add the water to a small pot. Bring to a boil and add the quinoa.
  2. Bring back to a boil and then cook on medium for 12 minutes or until water is dissolved.
  3. Remove from heat and let it sit for 15 minutes.
  4. In a large sauce pan add the olive oil over medium heat.
  5. Add the mushrooms, asparagus, bell pepper and spinach.
  6. Saute for 10 minutes.
  7. Push the vegetables to one side of the pan and add the egg whites.
  8. Cook the egg whites and scramble them with a spatula.
  9. Mix the eggs with the vegetables and add the tomatoes.
  10. Season with salt and pepper.
  11. Spoon the quinoa into egg and vegetable mixture.
